Ingredients
- 2 lbs. ground beef
- 3 egg
- 1 cup Italian-flavored bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup ketchup
- 1/4 cup diced onion
- 1/4 cup Worcestershire sauce
- 1/4 cup finely chopped Carando® Genoa Salami
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon Italian seasoning
- 1 teaspoon freshly ground black pepper
- 1 cup milk
- 8 thin slices provolone cheese
- 8 thin slices Carando® Hot Capicola
- 8 thin slices Carando® Pancetta
Preparation
- Preheat oven to 350°F. Combine ground beef, eggs, breadcrumbs, Parmesan cheese, ketchup, onion, Worcestershire sauce, salami, garlic, parsley, Italian seasoning and pepper in large bowl; mix well. Gradually add milk until mixture is a consistency that will form a loaf without flattening.
- Place half the meatloaf mixture into a 9x5x3-inch loaf pan. Layer cheese and capicola slices over top. Place remaining meatloaf mixture over capicola and cheese slices. Arrange pancetta slices over top of meatloaf to cover entire surface.
- Bake at 350°F. for 40 to 50 minutes until internal temperature reaches 160°F. Remove meatloaf from oven, let stand 15 minutes before slicing to serve. Stuffed meatloaf can be topped with your favorite sauce.
