  1. Preheat oven to 350°F. Combine ground beef, eggs, breadcrumbs, Parmesan cheese, ketchup, onion, Worcestershire sauce, salami, garlic, parsley, Italian seasoning and pepper in large bowl; mix well. Gradually add milk until mixture is a consistency that will form a loaf without flattening.
  2. Place half the meatloaf mixture into a 9x5x3-inch loaf pan. Layer cheese and capicola slices over top. Place remaining meatloaf mixture over capicola and cheese slices. Arrange pancetta slices over top of meatloaf to cover entire surface.
  3. Bake at 350°F. for 40 to 50 minutes until internal temperature reaches 160°F. Remove meatloaf from oven, let stand 15 minutes before slicing to serve. Stuffed meatloaf can be topped with your favorite sauce.
