Salami & Pepperoni Skewers with Balsamic Vinaigrette

Ingredients

  • 32 slices Carando┬« Genoa Salami
  • 32 cubes Carando┬« Pepperoni
  • 8 oz. mozzarella cheese balls
  • 1 14 oz. can small artichoke hearts, drained and halved
  • 1 6 oz. jar large pitted Spanish olives, drained
  • 16 slices Yellow Peppers, roasted
  • 16 wooden skewers, 6 in. long
  • 1 16 oz. bottle balsamic-basil vinaigrette
  • 1 tbsp. fresh lemon juice

Directions

1. Layer a mix of salami, pepperoni, mozzarella, artichoke hearts, olives and peppers on skewers. Place skewers in a large plastic container or baking pan.
2. Combine vinaigrette with lemon juice and stir well.
3. Pour mixture over skewers then cover tightly and chill 8 hours.
4. Remove skewers from container and discard marinade before serving.
